ASIAN FOODWAYS:CHINESE

China has numerous cuisines that differ according to region and ethnicity. The north features wheat noodle and dumpling dishes, while the southern cuisines are based on rice. The north tends to use more spices (particularly chili peppers); while the south tends towards blander dishes and thick sauces. Since the majority of Chinese immigrants to the US were historically from the South, Cantonese style cooking tends to be the Chinese cuisine most Americans are familiar with. The Midwestern preference for non-spicy foods has helped to make Cantonese Chinese restaurants popular here. Some of the most popular dishes include eggrolls, crab Rangoon, sweet and sour soup, sweet and sour pork, and other standards. Chopsticks are usually provided at the customers' request.
